Learn the secret of Parma ham production in Parma, a city loved for its fresh-from-the-attic prosciutto and aged Parmigiano Reggiano cheese.
You will go to an organic farm that produces the famous Parma ham and meets the producer to discover the process of making a gourmet Parma ham. Follow the process, from the careful and accurate selection of the pigs and their diet. See where the fresh haunches are selected and salted. Enjoy access to areas such as the cooling, salting and "resting" rooms. Each room emulates the traditional winter to spring curing seasons.
You will also go to the cellar branding areas, which are usually inaccessible to the public. It's here that the naso (master nose) selects the perfect products to use for the fire-branding of the twin crowns. Once produced, Parma ham finds its way to the top restaurants around the world.
